  • 2 large russet potatoes Russet Potatoes
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup sour cream
  • 2 tablespoons butter melted
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Wash and prick potatoes with a fork. Air fry at 400°F (200°C) for 30-40 minutes, or until tender.
  • Let cool slightly, then cut potatoes in half lengthwise.
  • Scoop out the potato flesh, leaving a 1/4-inch border. Mash with butter, cheese, sour cream, salt, and pepper.
  • Fill potato skins with the mixture. Air fry at 375°F (190°C) for 5-7 minutes, or until heated through and slightly browned.

Notes

For extra flavor, add bacon bits or chives to the potato mixture.
