Instructions
Preparation Steps
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, sugar, baking soda, and salt.
In a separate bowl, mash bananas. Add egg, melted butter, and milk; mix well.
Add the wet ingredients to the dry ingredients and stir until just combined.
Fill muffin cups about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
These muffins are best served fresh, but can be stored in an airtight container at room temperature for up to 3 days.
