Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
Core the apples, leaving about 1/2 inch at the bottom.
In a bowl, beat together cream cheese and sugar until smooth.
Beat in vanilla extract and eggs, one at a time.
Stir in lemon juice.
Fill each apple with the cheesecake mixture.
Bake for 40 minutes, or until apples are tender and filling is set.
Notes
Serve warm with a scoop of vanilla ice cream or whipped cream.
