Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together buttermilk, oil, eggs, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Slowly pour in the boiling water and mix until smooth.
Fill the muffin liners about 2/3 full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
These cupcakes are even better the next day! Feel free to add chocolate chips or frosting.
