  • 2 lbs Lamb shoulder, cut into 2-inch cubes
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup All-purpose flour
  • 4 cups Lamb stock
  • 1 cup Red wine
  • 1 tsp Dried thyme
  • 0.5 tsp Dried rosemary
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Preparation Steps

  • Season the lamb cubes with salt and pepper.
  • Sear the lamb cubes in batches until browned on all sides. Remove from pot and set aside.
  • Add the onion and garlic to the pot and cook until softened.
  • Stir in the flour and cook for 1 minute.
  • Gradually whisk in the lamb stock and red wine.
  • Add the thyme, rosemary, and browned lamb. Bring to a boil, then reduce heat and simmer for at least 2 hours, or until the lamb is very tender.

Notes

Serve hot with crusty bread or mashed potatoes.
