  • 1.5 cups Uncooked long-grain rice
  • 1 cup Diced onion
  • 1 cup Diced green bell pepper
  • 10.75 oz Tomato soup
  • 1 cup Milk
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Preparation Steps

  • Preheat oven to 350°F (175°C). Brown ground beef in a large skillet over medium-high heat; drain off excess fat.
  • Add onion and green bell pepper to the skillet and cook until softened, about 5 minutes.
  • Stir in rice, tomato soup, milk, salt, and pepper. Bring to a simmer.
  • Pour mixture into a greased 9x13 inch baking dish.
  • Bake for 30-35 minutes, or until rice is cooked through and casserole is bubbly.

Notes

This casserole can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
