Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla.
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fill the muffin liners about halfway full.
Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
Let the cookie cups cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
To serve, whisk together the hot chocolate mix and milk. Fill each cookie cup with the hot chocolate and top with mini marshmallows.
Notes
For extra chocolate flavor, use dark cocoa powder. You can also add chocolate chips to the cookie dough.
