  • 1 cup warm milk
  • 2.25 tsp active dry yeast
  • 1 tsp sugar
  • 1 large egg
  • 4 cups all-purpose flour
  • 0.5 tsp salt
  • 0.5 cup sugar for dusting
  • 2 tbsp ground cinnamon for dusting

Preparation Steps

  • In a large bowl, combine warm milk, yeast, and 1 teaspoon of sugar. Let stand for 5 minutes until foamy.
  • Whisk in the egg. Gradually add flour and salt, mixing until a soft dough forms.
  • Turn dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
  • Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  • Punch down the dough and roll it out to about 1/2 inch thickness. Cut out beignets using a 2-inch cookie cutter or a knife.
  • Heat oil to 375°F (190°C). Fry beignets in batches for 1-2 minutes per side, until golden brown.
  • Drain on paper towels. Immediately toss in a mixture of 1/2 cup sugar and 2 tablespoons of cinnamon.
  • Serve warm and enjoy!

Notes

For a richer flavor, use buttermilk instead of milk. You can also add a pinch of nutmeg or cardamom to the dough.
