Instructions
Preparation Steps
In a large bowl, combine warm milk, yeast, and 1 teaspoon of sugar. Let stand for 5 minutes until foamy.
Whisk in the egg. Gradually add flour and salt, mixing until a soft dough forms.
Turn dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic.
Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
Punch down the dough and roll it out to about 1/2 inch thickness. Cut out beignets using a 2-inch cookie cutter or a knife.
Heat oil to 375°F (190°C). Fry beignets in batches for 1-2 minutes per side, until golden brown.
Drain on paper towels. Immediately toss in a mixture of 1/2 cup sugar and 2 tablespoons of cinnamon.
Serve warm and enjoy!
Notes
For a richer flavor, use buttermilk instead of milk. You can also add a pinch of nutmeg or cardamom to the dough.
