  • 0.5 cup shredded cheddar cheese
  • 0.25 cup diced green chilies canned

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  • In a separate bowl, whisk together milk, egg, and oil.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Stir in corn, cheese, and green chilies.
  • Pour batter into the prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool slightly before serving.

Notes

For a spicier casserole, add more green chilies or a pinch of cayenne pepper. You can also add other vegetables, such as diced bell peppers or onions.
