  • 2 carrots Carrots chopped
  • 2 lbs Potatoes peeled and quartered
  • 1 cup Beef Broth

Preparation Steps

  • Season the beef roast generously with salt and pepper.
  • Sear the roast in a large pot or Dutch oven over medium-high heat until browned on all sides.
  • Add the onion, carrots, and potatoes to the pot. Pour in the beef broth.
  • Bring to a simmer, then cover and transfer to a preheated oven at 325°F (160°C).
  • Cook for 3-4 hours, or until the beef is fork-tender.
