Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
Add mushrooms and cook until tender, about 8 minutes.
Stir in chicken broth, heavy cream, salt, and pepper. Bring to a simmer and cook for 10 minutes.
Add the cooked chicken and heat through. Serve hot.

This soup is even better the next day! Feel free to add other vegetables like carrots or celery.
