  • 2 cups diced rotisserie chicken
  • 8 ounces cremini mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add mushrooms and cook until tender, about 8 minutes.
  • Stir in chicken broth, heavy cream, salt, and pepper. Bring to a simmer and cook for 10 minutes.
  • Add the cooked chicken and heat through. Serve hot.

Notes

This soup is even better the next day! Feel free to add other vegetables like carrots or celery.
