Preparation Steps
Preheat oven to 400°F (200°C).
Wash and chop sweet potatoes into 1-inch cubes. Toss with olive oil, salt, and pepper.
Roast for 20 minutes.
While sweet potatoes are roasting, sauté onion and garlic in olive oil until softened.
Add kale and cook until wilted.
Combine roasted sweet potatoes with kale mixture. Serve warm.
