  • 1 bunch Kale Chopped
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive Oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • Wash and chop sweet potatoes into 1-inch cubes. Toss with olive oil, salt, and pepper.
  • Roast for 20 minutes.
  • While sweet potatoes are roasting, sauté onion and garlic in olive oil until softened.
  • Add kale and cook until wilted.
  • Combine roasted sweet potatoes with kale mixture. Serve warm.
