  • 1.5 lbs Chicken breasts
  • 1 cup Sun-dried tomatoes, oil-packed drained
  • 5 oz Baby spinach
  • 0.5 cup Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Season chicken breasts with salt, pepper, and oregano.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Brown chicken breasts on both sides.
  • Add minced garlic and sun-dried tomatoes to the skillet. Cook for 1 minute.
  • Stir in spinach. Cook until wilted.
  • Sprinkle parmesan cheese over the chicken and vegetables.
  • Transfer skillet to the preheated oven and bake for 20-25 minutes, or until chicken is cooked through.

Notes

Serve hot over pasta or rice. Garnish with extra parmesan cheese and fresh basil (optional).
