  • 1 lb Ground beef
  • 1 cup Chopped onion
  • 2 cloves Garlic, minced
  • 28 oz Crushed tomatoes
  • 15 oz Ricotta cheese
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 0.5 cup Parmesan cheese
  • 1 tsp Italian seasoning

Preparation Steps

  • Brown the ground beef in a large pot over medium heat. Drain off any excess grease.
  • Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the crushed tomatoes, ricotta cheese, chicken broth, heavy cream, Parmesan cheese, and Italian seasoning. Bring to a simmer.
  • Reduce heat and simmer for 15-20 minutes, or until heated through.
  • Serve hot.

Notes

For a spicier soup, add a pinch of red pepper flakes. You can also add other vegetables, such as spinach or mushrooms.
