  • 1 pound Italian sausage
  • 2 tablespoons Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken broth
  • 2 cups Potatoes cubed
  • 10 ounces Kale chopped
  • 1 cup Heavy cream
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Remove the sausage from its casings and brown it in a large pot over medium heat.
  • Add the olive oil, onion, and garlic to the pot and cook until softened.
  • Stir in the chicken broth, potatoes, and kale. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
  • Stir in the heavy cream, salt, and pepper. Heat through and serve.
